A Landscape of Contrasts

The agricultural east: Across the sweeping arable lands of Lincolnshire and Northamptonshire, the foraging calendar is heavily driven by farming. Massive early spring blooms of oilseed rape yield a delicate, pale honey that sets very quickly. Later in the summer, fields of borage (starflower) and field beans provide a distinctly clear, mild summer harvest.
