The North York Moors: This is one of the largest expanses of heather moorland in England, and its Ling heather does not bloom until mid-August, later than almost anywhere else in the county. True heather honey has a thixotropic, jelly-like set that will not run from the comb; it must be worked loose with a specialised press before it can be jarred. The result is an amber-red, intensely aromatic honey unlike anything else produced in Yorkshire.

The Vale of York: Between the Pennines and the Yorkshire Wolds, this broad, flat vale drained by the Ouse and the Derwent is some of the most productive arable land in the north of England, its fields running to wheat, barley and oilseed rape. Bees working the hedgerows and orchards here produce an early, delicate honey, usually the first crop of the Yorkshire season.
